Curried Couscous Salad



I can’t believe I have not posted this recipe yet. It was given to me by my friend Jennifer who these days I only keep in touch with through Facebook. Our kids went to the same preschool co-op some time back. She always has these amazing recipes to share. This one has become my staple potluck dish because it is super, extremely-duper easy and fast to make and is always a hit, I can’t take it anywhere without getting tons of requests for the recipe. So if you haven’t had the chance to try this salad consider making it this weekend, you won’t regret it!




Curried Couscous Salad

(Print this recipe)


Salad:
1 cup of water
1 cup of couscous
1 ½ cup broccoli florets steamed
½ cup red onion diced
½ cup carrots, shredded
½ cup dried cramberries
Cashew nuts to taste
1 can garbanzo beans, rinsed and drained

Dressing:
1 Tbsp white vinegar
1 ½ Tbsp olive oil
1 Tbsp sugar
1 ½ tsp curry powder
1 tsp bottled ginger
Salt to taste

Make couscous with 1 cup of boiling water. Mix all ingredients except cashew nuts.

Mix all dressing ingredients together, then mix into the salad.

Toss in cashew nuts and serve at room temperature.

  2. Voce sempre muito gentil Lu! Se voce nao achar os cranberries coloca uva passa. Nunca experimentei assim, mas a receita original dava as duas opcoes. Alias tambem mandava jogar feta em cima so que nao gostei com feta. Tirando isso realmente essa salada eh maravilha. Ah depois tambem tenho que te contar do nosso ultimo jantar do cooking club, foi demais!
