Baked Salmon with Carpers and Mushrooms


Omega-3 fatty acids found in salmon are believed to help lower triglycerides and increase HDL cholesterol (the good cholesterol). Other studies also suggest that these fatty acids may help lower high blood pressure and improve mood. This recipe for baked salmon is great because it is simple and fast, totally appropriate for busy summer days.


Baked Salmon with Carpers and Mushrooms

2lb Salmon Fillet
Juice of 1 lemon
Sea Salt to taste (about 2tsp)
2 Tbsp Extra Virgin Olive Oil
2 Tbsp Butter
½ cup Capers, rinsed twice in cold water
1 (4oz – 113g) can mushrooms, drained

Preheat oven to 350°F (about 190°C).

Mix the lemon juice, salt and olive oil together and rub on the salmon on both sides. Place on oven safe baking dish, cover with aluminum foil and let rest in the fridge for 20 minutes.

Heat the butter in a saucepan. Add the carpers and the mushrooms, cook stirring for 2 minutes.

Place salmon with foil on top on oven for 20 minutes. Remove, open foil and spread butter capers and mushrooms mixture on top.

Cover with aluminum foil again and take back to the oven for another 10 minutes or so.
