Pineapple Mint Juice


In Brazil people drink a lot of natural fresh juices. Restaurants serve a variety of unique flavors that compete head-to-head with the funkiest of sodas.




While I hate serving my kids store-bought juice as I really don’t believe they need all the extra sugar, I do give them homemade juice drinks once in awhile. Luckily my kids love all kinds of fruit and eat a lot of it - bananas, plums, oranges, strawberries, melon and watermelon are some of the favorites in my house. But once in awhile some fruits don’t make their list of favorites and, lucky for me, this week my offering of sliced pineapple did not go over so well with them. So, I decided to make a favorite juice I used to drink in Brazil while incorporating some wonderful mint from my garden.


By the way even thought they didn’t eat the pineapple, the twins absolutely loved the juice and by the time the older ones came back from school there was nothing left.

Pineapple Mint Juice

About 3 cups of pineapple chunks fully packed
About 1 cup loosely packed fresh mint
About 2 ½ cups of cold water
Sugar to taste (optional)

Place pineapple, mint and water in blender and blend well. Add sugar if necessary to taste. Mix again.
