Chocolate Orange Mousse


Along the lines of the dessert-a-palooza that has taken over my blog, here is another Ina Garten recipe that I made for the Thanksgiving Day Potluck.



Halal Chocolate Orange Mousse
Halal-ized from Barefoot In Paris by Ina Garten

1 cup good quality semisweet chocolate chips
1/3 cup good quality bittersweet chocolate chips
1/3 cup fresh squeezed orange juice
1 tsp alcohol free vanilla extract
1 tsp grated orange zest
12 Tbsp unsalted butter at room temperature
8 organic eggs, at room temperature, separated
½ cup + 2 Tbsp sugar separated
Pinch of sea salt
½ cup cold heavy cream

Combine chocolate chips, orange juice and vanilla in heat proof bowl. Set bowl over pan of barely simmering water until chocolate melts. Cool to room temperature then whisk in orange zest and butter until combined.

In another bowl, combine egg yolks and ½ cup of sugar and beat on high with hand mixer for about 4 minutes or until pale yellow. Then with the mixer on low speed combine the chocolate.

Wash well and dry the whisk attachment, then beat 1 cup of egg whites with salt and 1 tablespoon of sugar until firm.

Whisk half of the egg whites into the chocolate mixture, then carefully fold in remaining egg whites.

In a separate bowl, again with clean beaters, beat in the cream and last tablespoon of sugar until firm.

Finally, fold the whipped cream into the chocolate mixture.

Pour the mousse into individual bowls or one large bowl and chill. I usually make the night before.
